Etymology
The word "meeting" has a straightforward and fairly old history!
It comes from the Old English word "mētung," which meant "a coming together," "an encounter," or "an assembly." This "mētung" was built directly from the verb "to meet" (in Old English, this was "mētan").
So, right from its earliest known use, "meeting" meant pretty much what it still means today: the act of people or things coming together, or the gathering itself. The first known uses of "mētung" date back to before the 12th century, showing that the concept and word for a gathering have been a part of the English language for a very long time.
Essentially, "meeting" literally describes the action of "meeting" (the verb) and has always referred to the event where that action takes place.
